CHEF
Matteo Metullio & Davide De Pra
We’ve been working side by side since 2013. There’s no recipe. Just respect, friendship, and the strength of a united team.
Matteo Metullio was born in Trieste, a city shaped by borders and wind.
By the age of twelve, he already knew where he was headed: he would become a chef. His journey began in high-altitude kitchens, forged through intense seasons and demanding teachers. There, he learned precision, vision, and deep respect for raw ingredients. In Canale d’Agordo, he met his first mentor, Oscar Tibolla. His most defining experience came next: four years of learning and growth under Norbert Niederkofler in Alta Badia.
Davide De Pra was born in Falcade, in the heart of the Dolomites.
Raised in a family where food mattered, he brought the same commitment to skiing. He trained in iconic Alpine restaurants—Malga Panna, Tyrol, Le Due Spade—before joining the luxury hotel world, where he honed his organization and broadened his culinary perspective. Bound by a shared mentor, they met at Alle Codole. It all started there — the beginning of their bond.
In 2013, Matteo took charge of the kitchen at La Siriola, the restaurant of Hotel Ciasa Salares, and chose Davide as his right-hand. The Michelin star was confirmed; the second followed in 2017. The vision was now one.
That same year, a meeting with Alex Benvenuti lit the spark for a new challenge: bringing gourmet cousine back to Trieste, inside the historic Grand Hotel Duchi d’Aosta. And so, Harry’s Piccolo was born. Matteo and Davide’s culinary philosophy follows a clear path: bold pairings and authentic flavor. Each dish reflects careful research and a meticulous process, where the ingredient—sourced without geographical limits—is celebrated in its purest form. It’s not about distance, but about truth. Not about dazzling, but moving.
In November 2018, Harry’s Piccolo was awarded its first Michelin star. The second followed in 2020, placing Trieste once again on the map of fine dining.
In 2025, a new chapter begins: Harry’s Piccolo moves to Palazzo Dreher. New home, same soul.
